Weekly Menu for May 24th thru May 29th

A tribute to the women who have touched my life these past eight weeks....

I remember long ago my Mom asking me if and when my life was ever going to slow down, and I would simply respond with, when this project is done, when my kids are no longer involved in this or that and over time I’ve noticed that I would just replace the current task, project or adventure with another task, project or adventure.  I’ve come to the conclusion that I’m just wired to be busy, I like being busy. I enjoy being creative, helpful, and adventurous and have decided that busyness is my drug of choice!  
This week was the last installment for the video submissions for the Real Women of Philadelphia (RWoP) contest and the week was all about desert.  I did not participate in desert week as deserts are not made very often anymore in this household.  As I child I remember I would always be the one who was responsible for the desert, basically because I wasn’t responsible for anything else, my mom was - so for years I cranked out some pretty amazing sweets.  Today I am the one who is responsible for the majority of what goes on in my household and when it comes to feeding the family deserts are not part of the plan.  Of course my kids would be thrilled to have a homemade desert for dinner each night, heck they would be happy to have any type of desert every night, but that’s not going to happen!  We have desert type food once in a blue moon, not because I don’t allow my kids to have desert, they do so now and then, but because by the time we have our big dinner there is absolutely no room for desert.  In fact I remember heading to a restaurant once and I ordered a desert as my dinner.  I knew that if I ate an entree there would be no room left and that desert just looked too good not to do it.  Of course my kids were with me and every now and then they have ask if they can have desert for dinner and I always reply, yep, when your a mommy!  
So if I wasn’t making, filming and editing deserts this week, what was I doing?  A lot, just a lot of other things.  My sons football practices have started, the new cheer season for my daughter has started and after a bit of a break I’m back to helping with the coordination and coaching of an all-star team.  Then there was what seemed like all of the insurances needing to be renewed at the same time, a billing problem with a bill and it seemed like I was on the phone for most of the week and then I had to be out of town yesterday.  Regardless of what task I check off my to-do list, it is replaced by yet another task.  As I said before, I really do like being busy, but like everything else, too much of one thing is not always good for you.  I’m really tired today and have a headache that will just not go away regardless of how much Advil I pop.  
So I ask, do you find that you place so much pressure on yourself sometimes to get it all done?  I know I do, take this blog for instance.  On Thursday night I had already figured out what recipes were going to be featured and I just had to put it to cyber paper, but when 11:00 p.m. rolled around I had absolutely no energy to do so, even though I’m a night owl.  Knowing that yesterday I was going to be out of town for the majority of the day, I figured when I returned I would then do my posting, but after a long day of driving and then returning home and answering emails that could not wait any longer, I found myself tired exhausted! Yet, I was beating myself up telling myself that my blog is SUPPOSED to be posted on Fridays!  As I sit here today; Saturday, evening no less, typing away I wonder why I do this to myself and why we as women do this to ourselves?  I do this blog because I want to be a help to others and to share my love of food.  I do not get paid to do this blog nor do I have to meet the Friday deadline for a publisher, so why the pressure?  I have absolutely no idea!  Perhaps it is the same for everyone, we are own worst critic, we feel that we must be the “perfect” mom, wife, sister, friend, etc., yet I know that I have absolutely no one in my life expecting this from me.  I’ve learned that I need to follow their lead and stop expecting perfection from me and realizing that while I want to be the best me I can be, I will never be a perfect me, it’s impossible, there has been only one perfect one, and there will never be another.  
This week I’ve been thinking about the last 8 weeks of the Real Women of Philadelphia contest - there are so many women, over 500 I believe, who had the same goal; to head to Savannah, GA as a finalist in this contest.  Yet, the odds of becoming one were going to be slim as there were only 16 spaces to be won.  In reading the forums I would feel for the women who were heartbroken when Wednesdays rolled around and they were not one of the two chosen that week, on occasion myself include I have to admit.  They started to question themselves as to why they were not chosen.  Perhaps it was because they weren’t the right height, weight, or shape, was their hair not combed right, was their kitchen not big enough or fancy enough, was their lighting not right, was their recipe not good enough, was it too hard to make, was it too easy to make, was the recipe too common, was it to exotic, were they not perky enough, were they too perky, were their editing skills not good enough, and on and on it went.  Women beating themselves up over these very insignificant reasons, reasons that those around them, those they cook for daily, those they provide for daily, those they love on daily, do not see.  For those who love them only see that they were blessed with the best mom, wife, sister, friend, etc.  They know that they have the most beautiful, loving, fun, and I’ll say it, the most perfect person in their life, that just happens to be the best cook in their book, and should have won a spot hands down. Why? Because those around us feel the love we place in everything we do for them, there is no paycheck or recognition when we provide our family with love, nourishment and encouragement, it is just what we do, and I have to say that all the women demonstrated these characteristics in abundance.  I am so proud to have been part of the community of women at the Real Women of Philadelphia.  The friendships, dinner ideas, tips, laughter and not to mention the amazing food has truly been a blessing to me and I’m sure to the majority of the women who participated.  While I along with over 500 women may not be going to Savannah, I know that we feel we truly did win; we now have new friendships that would have never formed if it had not been for this contest, we have learned to step out of our comfort zones, we have added new titles such as camera operator, editing guru and software tech to our already long resumes and have become even bigger stars in our families eyes. I want to thank you for allowing me to be a part of your life, a thank you to Paula Deen, EQAL and Kraft foods for this journey and for bringing a bunch of foodie women together.  So after what has to be my longest intro ever (LOL) I invite you to enjoy this weeks menu featuring more amazing women of the RWoP, and as always have a fabulous week, you deserve it you beautiful and amazing woman!

I think it’s best to let Kathyrn describe this dish - This entrée is a takeoff of an Italian dish I grew up with “Bonzetta” (stuffed breast of Veal).  It was served only on special occasions, but I did love it so. I reworked some of the ingredients, made it a bit more affordable and weeknight meal friendly. Make no mistake though, this entrée is elegant enough to serve at a dinner party.  Accompanied by herbed rice and a garden salad it’s a winner.  I think that summed it up nicely!  Yum.

I love quiche, and I remember way back when, my husband used to say, men don’t eat quiche!  LOL.  Yeah right, I know men will eat pretty much anything that  is placed in front of them including quiche and there will be no complaining when you are serving one that has shrimp, spinach and BACON!  Everyone loves bacon!

Since Paula Deen was the reason we at the RWoP came together I wanted to pay tribute to her and include one of her recipes this week (not like I haven’t done this before, she rocks!) and this recipe just screamed weekend dinner to me.  If you don’t have Paula’s merlot steak sauce you can do what I did, I combined A-1 and Merlot wine, 1/4 cup of each and simmered in a small saucepan until it was reduced by 1/2. 

Weekly Menu for May 17th thru May 22nd

Running, running, running...whew!  While I’d like to say that the running I've been doing is the type to help me stay in shape, I’m afraid it’s the type that has me running around like a chicken without a head!  I’m sorry for the delay in posting but I wanted to make sure that I finished my two submissions for the Real Women of Philadelphia site.  Of course the hope is to actually be chosen as a finalist, but I have to say I was filled with so much excitement to share the recipe I came up with this week!  Now, I’m not sure everyone will share in this excitement but I know that the folks back in New Mexico, California, Arizona and Texas are going to be saying yuuummmmm, in unison!  You see I came up with a new burger recipe..... Smothered Green Chile Queso Burgers!  OMG (as my daughter would say) these burgers ROCKED!  Now if your a fan of green chile and oozing cheese, you will love this recipe.

Drum roll please.... here is the recipe for those ROCKING burgers!  Like I said before if your a fan of messy burgers that are loaded with flavor, these are the burgers for you!  You will not be disappointed!  YUM!

Potato, Chicken and Bacon Skillet

Recipe Courtesy of Jo Davison
Serves 6-8
1 Rotisserie Chicken, shredded
4 Slices Bacon, diced
1 Sm. Onion, diced
2 pounds (approx. 6 -7) Potatoes, preferably Yukon Gold, 
1 Cup Shredded Cheddar Cheese
Prepare chicken by shredding, season with salt and pepper and set aside.  In a large nonstick skillet cook bacon on medium heat until crisp.  Remove bacon and allow to drain on paper towels.  Add onions to skillet and sauté until translucent, about 5 minutes.  Add the potatoes, stir to combine flavors; cover.  Cook on medium-low heat until tender, stirring occasionally.  (Approximately 20 to 25 minutes) Add chicken and bacon, combine with potatoes, add cheese, cover and cook until cheese melts.

Weekly Menu for March 1st thru 6th

Happy Friday!  I’m not sure how your week was but mine seemed to be a bit more nuts than usual.  Last week I told you about all the new March magazines I was receiving, and since the week was so busy I only got thru two of them and only had time to test one of the recipes I flagged.  You are going to be so happy though, because the one I tested, ROCKED!   Along with that rockin’ meal, we have a really great variety of proteins and flavor profiles this week.  Times like this make me feel very happy that I’m not a picky eater, or more importantly a boring eater.  I have known people to eat the same 7 meals on the same days of the week, or those who eat chicken at every meal.  I just don’t get it, there is so much great food out there!  (Disclosure in a hushed announcer voice - If you know someone who fits into the above category, you should send them this blog, it’s your foodie duty.)
Speaking of March, we have St. Patty’s Day this month.  Since I’m not Irish, green is my least favorite color and I tend to eat more of the potatoes during the Corned Beef, Cabbage and Potatoes meal (when we have been invited to such a shindig in the past), I can’t say I will be the one providing any inspiration if your wanting to celebrate the 17th in a big way.  Although in my opinion, March does bring us one of the best days of the year in my book; daylight savings time begins!  Gone will be the days of feeling like you want to go to bed at 5:30 p.m., you somehow just seem to have more energy, the kids can stay outside longer, (wink wink) and I don’t know about you, but for me, when that extra hour comes back into play I get excited! Woo hoo!  I’d never make it in Alaska!

Quick Meal 1

This is a meal that gets made every so often, or at least often enough that it has made into my BBB (big blue binder).  This recipe is a kid friendly meal because of the pasta and cheese; but as the commercials say, it’s Mom approved because it has spinach cleverly disguised in it.

I’m sure you have noticed that most of the meals I post are hardy meals that have many flavors and components; and with many them I seem to only add a small salad as a side dish.  Well, this salad is the whole meal with no need for a side kick and the flavor components are just as satisfying.  For those of you who like black beans and want to up the fiber intake for the day, throw them in, they will compliment the dish nicely.

Remember when I told you that I’m not a big seafood eater but try to make fish recipes so that the family gets those Omega-3 fats into their diets?  Well, it’s time for another one.  Tilapia is a great fish for those who really don’t like “fishy” fish. Those of you who just love seafood won’t understand this, but those of you; like me who aren’t the biggest fans of fish will.  The flavor of the fish is very mild and with the added couscous and seasonings, I’m thinking it’s a dish you will like and be able to say you ate something healthy.     
   

Got Some Time Meal - 2
This recipe is a BBB favorite.  I found this recipe in the Williams-Sonoma magazine about four years ago and it’s a recipe that we all love and a great way to add some zing to your chicken.  In fact, it is such a great recipe that I’ve even made it for company.  I find that most times I don’t need a starch and I usually just add asparagus or a side salad.  This recipe instructs you to use toasted bread crumbs but I find that Panko bread crumbs work just as well and save time.

I’m going to be honest with you, meatloaf isn’t one of my favorite meals.  I know that it’s what people would call a staple in American cooking but my thinking is; if I’m going to have a big chunk of cooked ground beef, I’d rather it be in the form of a burger.  This week a request has been made for a good recipe and in the past when I’ve been asked to make a meatloaf, this is the one recipe I turn to.  I’m sure the reason I like this version is because it’s stuffed with ham, bacon and cheese.  If you feel the same way I do  about meatloaf I’m sure that after trying this recipe your perspective of it will change.  If you do not have a meatloaf pan, which is a rectangle dish that has an insert in it to catch the grease I highly suggest that you get one.  They are inexpensive and your meatloaf doesn’t sit in a pile of grease.

Pass the Wine; I got all the time - Meal 1
Taadaa, the big finish. This is the rockin’ recipe I mentioned in the beginning.  I found this recipe in my March issue of Food Network Magazine and the picture looked so good, I had to try it.  After reading the recipe thru I was a bit shocked that 3 sticks of butter, yes I said three, was used just for the crust, but it was sooooo good and flaky.  When you look at the time on the recipe you will understand why it’s in this category, but I have to say it didn’t take as long to assemble as I thought it would.  I used my food processor for the apples and potatoes and it shaved off lots of time.  Also, I chose to use ham because the mortadella (môrtəˈdelə|noun a type of light pink, smooth-textured Italian sausage containing pieces of fat, typically served in slices) just looked weird to me and since I was already going to be using 3 sticks of butter I just couldn’t do it. This dish was a hit and the combination of the apples with the potatoes was delicious. Although the next time I make this recipe (it has already been requested again) I’m thinking I will double the ham portion, as it did get a little lost.  This certainly is a dish you need to make this week.

February 15th - 20th "Raid the pantry and stock the freezer" week!

So do you have those days where you just don’t have the energy to go to the grocery store and the kids are getting tired of eating cereal for dinner?  As funny as that statement is I have to admit I’ve had this happen to me on more than one occasion, and this is when I decide I better get creative and figure out what I can make from the items left in my pantry.  If you’ve followed this blog since the beginning you know that I like it when I create a meal and there are enough leftovers to create a whole other meal; they are the meals I call “Freezer Value Meals”.  This week is all about having a backup plan for those moments.   My Quick Meals will be recipes that can be made from those extra items we have in the pantry and freezer.  Three meals will double to create easy grab-n-go meals for the freezer so you can give the family another option besides cereal; because you know that you will have another one of those days.   :)
This week you will also notice to the right the title Additional Information.  This area is all about sharing; I will be listing tips and shortcuts that I’ve either discovered with my own hits and misses or what others have shared.   If you have a great tip for our readers let me know and I’ll post it.  In the shopping list area, you will find a snapshot of the spreadsheet I have available.  Although I did try to make it it’s own web page for easy access, the text and not the grid was all that would process, so until I can figure out the magic formula I will be more than happy to email anyone one who would like a copy, it is quite handy.

Quick Meal 1
Your either going to go respond with; Yuk, I’ll pass or I remember this meal, my Mom would make this for me when she didn’t want to go to the store.  Exactly why this recipe is here this week, we always seem to have tuna in the pantry right?   Although I have to admit, secretly I really do like this meal just don’t tell anyone. 

Quick Meal 2
If I’m going to make tacos I go for my stripped beef recipe, but if it’s my son’s birthday (this is what he requests every year) or if I’m sick and can’t make dinner, my son takes over dinner duties and makes his tacos.  I’m sure most pantries contain taco shells since you’ve probably picked them up at a 10 for $10 buck sale (I’ve done this, what a deal right, sure... what am I going to do with 10 boxes of taco shells!) and without a doubt hamburger is the one staple that is in the freezer; thus tacos.  They are easy to make and a 13 year old can make them unsupervised.  So kick back and let your kids make you dinner!

While you may have chicken in the freezer and extra sour cream, this meal really doesn’t fit this weeks criteria, but we needed a chicken recipe and this one looked yummy.  Hmm not a whole lot to say on this one so let’s move on....   
Got Some Time Meal 2
So this is one of my freezer value meals.  When I buy a roast I make sure and get the biggest one I can afford and that will fit into my slow cooker.  While I enjoy a good Pot Roast and potato dinner that just needs some veggies and bread, I love what I can do with the leftovers!  This time we are going to make Burritos-to-Go, since these are individual servings they come in handy when you need a fast lunch or if you find yourself dining alone, or in my case; when I’m needing a chili fix!  This reminds me of this joke that was sent to me regarding New Mexico chili.... I’ll post it in the tips section so you can understand the obsession New Mexicans have with chili. :)  
Got Some Time Meal 3
Some of you may have a ham in the freezer that you picked up on sale during the holidays, which by the way is the best time to buy them and freeze them.  Nowadays since most ham’s you buy are precooked they can be moved into the Got Some Time category.  Our household is a fan of ham and scalloped potatoes are automatically the side dish.  While I’ve experimented making scalloped potatoes with different cheeses and add-in’s this combo is our favorite.  Your probably thinking that scalloped potatoes take forever to make but one day while trying a Rachael Ray recipe I found a tip that cuts the baking time by half and have stuck with it.  If you have a convection oven use it and shave off even more time!  Now the Breakfast Cups, have you seen the price for those prepackaged breakfast sandwiches?  Not only are they expensive but they are loaded with what I call glow-in-the-dark ingredients.  Making breakfast cups is your solution and our leftovers create one great breakfast to go.

Pass the Wine; I got all the time - Meal 1
Are you a soup or salad person at Olive Garden?  I’m a soup gal, not that I don’t love their salad also, but if by chance we eat at Olive Garden I order this soup.  So how did this soup become a back up in my freezer?  One day I was craving this soup and decided to get online and find the recipe, tada there it was.  I got busy making this soup and noticed that this recipe is making enough soup to feed an army!  Now when you access this recipe they have a little handy dandy drop down box that allows you to change the serving size, last year they didn’t!  So with my bucket of soup (not kidding) I started loading the leftovers into plastic containers, I not only filled the freezer I had enough to give to family and friends!   Today I still make the bucket size because it’s a great way to have an individual serving of soup that is homemade and not from a can.  
*** Note - Ingredients for the recipe are NOT included in the above grocery list, decide the serving amount you want to make first and then add to your list. ***
*If you are going to make enough for an extra meal and individual servings, make sure you do the following:  When all your ingredients are added DO NOT add the pasta.  (I used the small round pasta that Olive Garden did) Cook a small amount separately in a small saucepan and add to your individual servings.  When you pack up the leftovers for the freezer add DRY pasta to the container, yes DRY.  Since the pasta is so small it cooks quickly and if you add it during the first go around it will be mushy when you are ready to reheat.  The pasta will be cooked through when you reheat it and still have a the great pasta bite it should have. 

Tuna Noodle Casserole

Serves 6-8
1 pkg of Wide Egg Noodles
1 tbs. of butter (only if you use tuna in water)
2 cans of tuna, I prefer tuna in oil
1 can of Cream of Mushroom Soup
1 cup of frozen peas
1 1/2 cups of Sharp Cheddar Cheese
1 cup of fresh bread crumbs or panko bread crumbs
1/2 cup of finely shredded Parmesan Cheese
2 tbs of Olive Oil
Heat oven to 350 F.
Prepare egg noodles per package directions.  Drain, add butter if using tuna in water.  Add tuna, soup, peas and cheese. Mix to combine.  Add mixture to a prepared (non-stick spray) casserole dish.  In a small bowl, combine bread crumbs, Parmesan cheese and olive oil.  Spread bread crumb mixture evenly over top and bake for 10 - 12 minutes until top is golden.  

Ham and Scalloped Potatoes = Breakfast Cups


Ham - Prepare per package directions.

Scalloped Potatoes

Serves 8 - 10
2 cups milk
2 cups water
Salt
2 cloves garlic, peeled and smashed
3 lbs baking potatoes, peeled and sliced
1 1/2 cups cheddar cheese, shredded
1/2 cup Gruyere cheese, shredded
2 tbs flour
1 cup heavy cream
Paprika
Pepper
3 scallions, diced, greens included
In a large saucepan, combine the milk, water, 1/2 tsp of salt, and garlic.  Add the potatoes and bring to a boil over medium-high heat, stirring occasionally to prevent sticking.  Reduce heat to medium and simmer until the potatoes are tender but slightly firm, about 8 minutes.
Heat oven to 375.  Prepare a large casserole dish by either buttering it or using non-stick spray. With a slotted spoon, remove 1/2 of the potatoes and place at the bottom of the dish. Sprinkle with 1 tbs. of flour, add 1/2 of the onions and season with pepper.  Sprinkle 1/2 of the cheddar cheese and 1/2 of the Gruyere over top.  Duplicate and create a second layer with the remaining ingredients.  Pour the heavy cream evenly over the top and season with paprika.  Bake the potatoes until golden brown, about 40 to 45 minutes.  Let stand for 5 minutes before serving.

Non-Stick Spray
Muffin Tin
Heat oven to 350.
Spray a muffin pan with non-stick spray.  Add potatoes to each cup about 1/2 way full. Add ham to each cup.  In a separate bowl add 1 egg for each 3 cups, (a 12 cup muffin pan would require 4 eggs) add a splash of milk and season with pepper and salt.  Whisk eggs and add to each cup.  Sprinkle with cheese and bake until eggs are no longer runny and just a bit firm.  Remove from oven and let cool.  Wrap individually (wax paper sandwich bags are great) and place in the freezer.  When you need breakfast, remove from freezer and microwave for a few minutes.

Thanksgiving in a Pan

Serves 6 - 8
4 large Idaho or russet potatoes, about 3 lbs, peeled and cut into chunks
Salt
2 tbs. olive oil
1 medium yellow onion, diced
2 carrots, peeled and chopped
2 lbs of ground turkey
2 tbs Worcestershire sauce
2 tsp. poultry seasoning
2 cups frozen green beans or peas, steamed
1 can or jar of turkey gravy
1 cup of Shredded Cheddar Cheese
3 tbs. butter
1/2 cup sour cream
1 large egg, beaten
2 tbs. chopped chives
2 cups panko breadcrumbs
1 cup Parmesan cheese
3 tbs. olive oil
Place the potatoes in a stock pot, cover with water and bring to a boil, over high heat.  Salt the water and cook until tender about 12 to 15 minutes.
In a large skillet, heat 2 tbs of olive oil and sauté the onions and carrots for about 5 minutes.  Add the turkey, breaking it up.  Add the Worcestershire sauce and poultry seasoning.  Mix to combine flavors.  When turkey is cooked 90% through, season with salt and pepper to taste.  Mix in the gravy, cover with a lid or foil and set aside. 
Drain the potatoes in a colander and return them to the pot, add the butter, sour cream, egg and chives.  Mash the potatoes to your desired texture.
In a small bowl combine breadcrumbs, Parmesan cheese and olive oil.  Combine well.
Heat oven to 350F.  In a large casserole dish, layer the turkey mixture, vegetables, cheese and mashed potatoes.  Cover potatoes with the breadcrumb mixture and bake until the breadcrumb mixture is golden brown. (Usually about 10 minutes or so)
